Soup is a one-dish meal and is perfect for various situations, from providing comfort on a chilly evening to combatting a bad cold. It is nutritious, delicious and super easy to make. There are different kinds of soups that people like including tomato soup, tom yum soup, hot and sour soup and minestrone. Tomato Soup

Fry some chopped onions, celery, carrots, garlic in olive oil. Add 2-3 chopped tomatoes and 3 tbsp of tomato puree to it. Season with some salt and pepper and add 1 cup of vegetable stock. Cook for 7-10 minutes and then blend. Serve hot.

Creamy Mushroom Soup

In a pot, add some chopped leeks, celery, cauliflower, onions, garlic in oil. Add 1 cup of chopped cremini mushrooms to this. Add 1 tbsp of dijon mustard, 2 cups of vegetable stock, 1 tbsp of balsamic vinegar and 1 tbsp of thyme. Cook for 20 minutes. Blend until smooth and season with some salt and pepper.

Corn Soup

In a pot, add 1 cup corn, ½ cup creamed kernel corn and 2 cups of vegetable stock (prepared by frying some chopped onions, celery, carrots, thyme, garlic and parsley in oil with some salt and then boiling them in water for 30 minutes and discarding the vegetables). Cook for 20-25 minutes on medium heat. In a pan, fry some chopped onions and add 1 tbsp of miso to it. Add the corn mixture and cook for a few minutes. Blend this mixture and strain. Season with some salt and pepper and serve hot.

Potato Soup

Heat some oil in a pan. Add some chopped garlic and onions to it. Saute them for 2 minutes and then add 1 ½ cup chopped potatoes and 1 cup milk. Cook for 5-7 minutes. Transfer to a blender and blend until the potatoes are mashed. Transfer this to a pan and cook for 2 minutes. Add water if required. Season with salt and pepper and serve hot.
