Quarantine has surely brought out the foodie in us. Getting from morning meal to mid-day meal and mid-day meal to night time meal without munching on something snack worthy is hard. We get it. Henceforth, we bring to you these easy snack ideas. These are super easy to make and will get you through the day without running to the candy jar. Don’t have time to make one of these recipes? Not only are these healthy but also nutritious and won’t take much time to make either. Wedding Affair brings to you a few snacky delights that will get you through the day with ease.

Roasted Chickpeas

Chickpeas are good for so much more than just creamy homemade hummus. Though, that’s definitely a good use of them! They also make for a particularly good salty snack, and are effortlessly adaptable based on what you’ve got in your spice cabinet. If you love the cumin/chili/oregano blend, you are sorted. But any of your favorite spices will do the trick. Be sure to follow our baking instructions closely, and your chickpeas will have the most satisfying crunch.

Preheat the oven to 350°. Pour chickpeas onto baking sheet in an even layer. Once your oven is heated, place the chickpeas in oven until completely dry. Keep them for 8 to 10 minutes. Then remove the chickpeas from oven and toss with oil and salt. Return to oven and bake until golden brown, dry, and crispy. 33 to 35 minutes will do the trick. Keep tossing halfway through. Combine chickpeas and seasonings on sheet tray and toss to combine. Spread into an even layer and let cool completely. To store, place in a resealable bag or tupperware. Keep the bag slightly open or lid ajar to maintain crispness.

Honey Chilli Cauliflower

Who doesn’t love a good healthy snack?  We all do. Much like our parmesan cauliflower bites. This snack has just enough crunch and flavor to keep us going. Craving salt but avoiding chips and unhealthy snacks? These sticky-spicy bites will save you from reaching for empty calories.

Preheat oven to 400° and line a large baking sheet with foil. In a large bowl, combine flour and cauliflower. Toss the entire mix until it is fully coated. In one bowl, add crispy breadcrumbs. In another bowl whisk eggs and add 2 tablespoons water. Dip cauliflower in beaten eggs. Transfer to a prepared baking sheet and season generously with salt and pepper. Bake until golden and crispy, for 20 to 25 minutes.

In a small bowl, whisk together cornstarch and water. Till the time the cornstarch dissolves completely. Set aside. Combine soy sauce, honey, garlic and lime juice in a small saucepan over medium heat. When the mixture reaches a boil, reduce heat and add the cornstarch mixture. Bring to simmer again and cook until sauce thickens. Toss cooked cauliflower in sauce until evenly coated. Return the cauliflower to baking sheet and broil for 2 minutes. Garnish and serve immediately.

Sweet Potato Chips

To make these sweet potato chips extra crispy, slice the potatoes as thin as you can. The chips will also crisp up as they cool. Preheat oven to 350°. Place two wire racks on two large rimmed baking sheets. Toss sweet potatoes in the oil until evenly coated. In a separate large bowl, whisk together all the delicious spices and cornstarch. Add sweet potatoes and toss until evenly coated in spice mixture. Place the sweet potatoes on wire racks in a single layer. Bake for atleast 25 to 35 minutes, until sweet potatoes look crispy and dry to touch. While the sweet potatoes cool, make dip. Fold green onions into sour cream and serve with sweet potato chips.
