You can either use a bowl or a blender to make this easy viral recipe. To a blender, add milk, vanilla extract, egg, salt, sugar, flour and blitz until combined. Pour the pancake batter to a sauce bottle or Ziploc bag, push it to one corner of the bag to make an acute angle, then snip at the end (just enough to squeeze out the pancake batter easily). Place a non-stick frying pan on medium heat, you can either grease with butter, oil or without and heat until hot.

Squeeze out the batter unto the hot pan (about 1 pound size) until fully covered, making sure they are not touching one another. Cook the tiny pancakes until they start to bubble and you can lift the edges or after about 30 seconds and flip using a fork, spatula or chopsticks. The mini pancakes should be golden brown before you flip, continue to cook the flipped side for another 20 to 30 seconds. Transfer to a bowl, you do not need to cover it. Repeat the process until you have exhausted the batter. Serve with butter, honey or maple syrup. (Source: The Dinner Bite)

Love & Olive Oil

The entire world is going ga-ga over the various versions available for this viral recipe. Well, we particularly love this one by Allrecipes. Plus, quite easy too, much easier than pancake cereals. First, preheat oven to 350 degrees F (175 degrees C). Grease a 9×5 inch loaf pan. In a large bowl, stir together the melted butter and sugar. Add the eggs and vanilla, mix well. Combine the flour, baking soda and salt, stir into the butter mixture until smooth. Finally, fold in the sour cream, walnuts and bananas. Spread evenly into the prepared pan. Bake at 350 degrees F (175 degrees C) for 60 minutes, or until a toothpick inserted into the centre of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.

Add the 3 tbsp milk, 3 tbsp vegetable or sunflower oil and a few drops of vanilla essence and mix until smooth, before adding 2 tbsp chocolate chips, nuts, or raisins, if using, and mix again. Centre your mug in the middle of the microwave oven and cook on High for 1½ -2 mins, or until it has stopped rising and is firm to the touch. (Source: BBC Good Food)

Pizza in a Mug

Take a small flat bottomed microwave-safe coffee mug and add in ¼ cup maida. Also add 1/8th tsp baking powder, 1/16th tsp baking soda and salt to taste. Additionally, add 1 tbsp cooking oil or olive oil. Then add 3 tbsp milk or water. Mix well to form a lump-free dough. Then, top with a generous amount of pizza sauce and spread uniformly and garnish with a handful of mozzarella cheese. And decorate with few olives and jalapeños while sprinkling chilli flakes and oregano. Further, microwave for 2 minutes, or until the cheese melts and the base is cooked completely.
