In this blog of the series “The Art of Multi-Sensory Food Experience”, we spoke with Mr. Pankaj Gupta and Mr. Sunil Khera, Directors of Khomchaa – The Chaat Culture. Transforming the beloved street food culture into a fine dining experience with innovation and imagination, they have created experiences that are etched in the wedding guests’ memories.

According to Pankaj, food today is a powerful expression of culture, creativity, and emotional memory. A multisensory food experience makes dining unforgettable, turning it into a performance that guests talk about long after the wedding.

“To nail a multisensory food experience, you need to curate food in a way that impacts every sense,” says Sunil. The first impression, for example, is always visual. After all, it’s rightly said: “Eyes eat first.” The vibrant colours, plating, and design of a dish make the very first connection with the guest.

Sound is another overlooked but vital aspect of food. Think of the sizzling of a hot plate or the crackle of nitro—these small elements transform food from passive to playful. Then comes smell, which Pankaj calls the “bridge between emotions and memories.” A single aroma can transport guests back to a nostalgic moment, intensifying their appetite and joy.

Taste, of course, remains the star—sweet, spicy, creamy, or crunchy flavours linger in memory. Finally, touch brings an intimate connection, whether it’s the crunch of a cone in your hand or the texture felt on your tongue.

Pankaj also shared his experience of creating a dish that masters this art of balance. “Engaging all five senses equally is extremely difficult—but engaging all five is absolutely possible. We created a dish called “Nitro Rose Dahi Bhalla Chaat in Edible Cone”. The colourful moong dal bhalla in rose-flavoured curd is accompanied by rose petal aroma. Your hand holds the crunchy cone while you taste the creamy yoghurt.”

Looking ahead, Mr. Sunil Khera believes wedding dining in India will be a blend of roots and innovation—where regional meets radical, flavour meets feeling, and culture meets creativity. And with Khomchaa leading the charge, chaat is no longer just street food—it’s a multisensory performance, one that celebrates tradition while embracing modernity.
