Where Do Cashews Come From?
While a lot of us enjoy the creamy and slightly sweet taste of cashews, not a lot of us know their origin. These kidney-shaped nuts are sourced from the cashew trees which are exotic evergreen trees with a height of up to 14 m and native to Brazil. The trees produce red-coloured flowers that grow to become pear-shaped pseudo-fruit, cashew apples.
Cashew nuts grow as seeds that grow from the ends of the cashew apple fruit. When the cashew apples ripen, they are picked, with the seeds still attached, from the tree branch. The seed, still encased in its shell, is hand-twisted and plucked off, then dried and steamed. After drying, it must be frozen and boiled before it can be removed from its shell. After harvesting, cashews are dried and roasted in a lengthy process that rids the nut of toxic oils and leaves the shell brittle and easy to remove. Naturally, the nuts have a greenish-grey colour which turns to the brown we know when roasted.
