Curdilicious: delicious dishes you can make from curd

Summers here, and all you need is curd to beat the heat! From spicy buttermilk to delicious raita, it is the ultimate ingredient to prepare dishes with, to beat the scorching heat. Curd has a sweet and sour kind of taste and is widely used in Indian households. It is extremely beneficial for health as it is loaded with good bacteria and is packed with essential vitamins and minerals. So, we have for you some easy and scrumptious dishes that you can make using curd and relish the deliciousness of this versatile ingredient.

Spinach Raita

Boil 2 cups of spinach leaves for 2 minutes in water till they become soft. Churn 300 grams of curd with a blender and add 1 tsp cumin powder, half red chilli powder, salt and 2 chopped green chillies. Add the spinach leaves and mix. Serve chilled.

Spicy Curd

Heat some butter in a pan, add 1 medium-sized chopped onion and one tomato and saute for 2 minutes. Season with red chilli powder and salt. Add a few curry leaves to it and cook for a minute. Add this to a bowl of chilled curd and mix. Serve.

Curd Rice

Cook a cup of rice in a pressure cooker for 2-3 minutes and strain. Mash the rice and mix with 2 cups of curd. Heat some oil in a pan and add ½ tsp cumin seeds and mustard seeds. Add 1 dry red chilli, a pinch of asafoetida, grated ginger and a handful of curry leaves. Pour this tempering into the curd rice mix. Season with salt and serve.

Curd Lettuce Salad

In a bowl, mix some powdered sugar, salt and washed and chopped lettuce leaves. To this add 350 grams of curd. Mix well and refrigerate for 2-3 hours. Top with mint and chopped onions and serve.
