Chef Sonam Yolomo shares, “The Chinese food have carved a space for themselves replacing (or accompanying) chole bhature and hara bhara kabab in the Indian wedding menu. While the trend started a few years ago with people warming up to the idea of eating such dishes, now families very well demand for international cuisine to be a part of the wedding menu. People want their guests to enjoy variety and provide different options in the same. Many families are open to include the Chinese food items in starters as well as in main course and dessert also. This is indicative of the fact that they are accepting and adapting to changing times.”

The trending tastes of 2018

The Chef further avers, “Colorful dim sum are in vogue as they are pleasing to look at. Use of bamboo charcoal to make the skins is being increasingly used. The latest variety of Siew long bun is getting increasingly popular, especially the bigger ones that are bowl sized. Exotic seafood dim sum is also being served at weddings now.

Chinese food isn’t just sweet, light and understated. It’s also bold, bright and aromatic. Salt and pepper squid, a basket of steaming hot dim sums and mind-numbing chilli chicken are some of the most loved Chinese delicacies that belong to one of the six prominent culinary regional cuisines in China – Cantonese, Hunan, Hakka, Mandarin, Sichuan and Zhejiang. A few ingredients are common to all of these regions – ginger, garlic, scallions, soy sauce, vinegar, sesame oil and bean paste. But others like oyster sauce, fish sauce and Worcestershire sauce are unique and give each cuisine its own personality.”

The kind of beverages that compliments the taste of dim sum

Speak of starters and the mind hops towards the bar stocked with yummylicious cocktails, and mocktails. However, with the dim sums ruling your taste buds, you must try a unique range of teas that complement dim sum extremely well, according to the experts at Stellar. Chef Sonam quotes, “Thankfully, tea is particularly versatile – for example, a floral oolong works with spicy dishes; its buttery texture complements the flavor of chocolate; and its fruitiness means it goes particularly well with seafood and meat. The classic Dragon’s Well green tea from Taiwan pairs perfectly with light, delicate flavors such as the Poached Peking dumpling. Different teas work differently depending on if it’s vegetarian, meat or seafood; bland or spicy. For example, green tea works very well with stronger tasting food like red meat or seafood.”
